Onions are a better source of quercetin than apples and rutin

The best dietary source of quercetin, a substance in food with interesting ergogenic, immunological and anti-inflammatory properties, is probably the everyday onion. This is suggested by a Dutch study published in the last century.

Study
In 1997, Wageningen researchers from the Rikilt research institute published an experimental study in which 5 test subjects were given a supplement with their breakfast on 3 different occasions. On one occasion the supplement contained applesauce with apple peel, on another occasion it contained fried onions and on another occasion it contained rutin.

Apple peel, onion and rutin contain quercetin. These are always different analogues, as the figure below shows. The researchers gave the subjects approximately the same amount of quercetin equivalent.

After administration, the researchers monitored for 36 hours how much quercetin appeared in the blood of the test subjects.

Results
Onions were clearly the very best source. The table below - click on it for a larger version - shows that the bioavailability of quercetin from quercetin exceeded that of quercetin from apples and rutin by a factor of 2.2 and 2.4 respectively.
