Diet with lots of vegetables reduces risk of mortality and cancer

Eating lots of vegetables can extend your life expectancy and reduce your likelihood of developing cancer. Nutritionists at Sookmyung Women University in South Korea discovered this when they followed a group of over 14,000 men for a period of 15 years. A diet containing lots of fruit had no effect in the Korean study, however.

Study
When the study began in 1993, the participants were aged between 40-59. The researchers knew what the men ate, and kept track of those who died and the cause of death.

Results
The more vegetables the men ate, the less likely they were to die during the study. According to the figure below, men who don’t each much in the way of vegetables would do well to start eating 200 g vegetables daily.

Fruit had no effect on mortality risk.

Eating vegetables lowered the chance of developing cancer, the Koreans discovered. The first figure below shows this. A high vegetable intake also reduced the chance of dying from cancer, as the second figure shows.

Fruit consumption on the other hand didn't reduce the chance of cancer, as the figure below shows.

Conclusion
In the concluding paragraphs of their publication, the researchers suggest that their study may underestimate the positive effects of a high vegetable intake.

This may be because people who do eat lots of vegetables have unknown symptoms that increase their mortality risk. For example, they may be ill and be following a special diet.
